The best thing you can do is figure out ways through multiple data points to get an idea of your installs. Unfortunately for your iOS app, this metric isn't something that Apple provides through iTunes Connect and there isn't an accurate way to measure it. This is an easy metric to find when your app is published in Google Play. One of the key metrics that you should have a pulse on regarding your app is how many users currently have the app installed on their device.
